I headed to Lucky Supermarket this morning to do some shopping and decided I didn't feel like cooking dinner tonight. Whenever I don't feel like spending lots of time prepping and cooking, I go to my old stand-by, the slow cooker. Just spend a few minutes adding some ingredients, pop a lid on it, and forget about it until dinner. This Slow Cooker Pork Roast is not only juicy and delicious, but it will free up some precious time in your day.
- Pork Shoulder Roast (I used a 3 1/2 pound roast)
- Sweet potato
- 1/2 white onion cut into large chunks
- Slow cooker seasoning
- 1/2 cup of water
I picked up a pork shoulder roast from Lucky and decided to pair it with some potatoes to make an easy slow cooker pork roast. I discovered that Lucky Supermarket will be having a buy one get one free sale running from 11/13 through 11/26 on any of the following mix-and-match items:
- Riverside or Honeysuckle White Frozen Turkeys
- Cooks Ham Portions
- Master Cut Beef Cross Rib Roasts
- Pork Shoulder Roasts
- Honeysuckle Turkey Breasts
This is the perfect time to stock up on some turkeys for Thanksgiving. I will be grabbing some more roasts for those slow cooker days.
Season the pork shoulder roast prior to placing it in the slow cooker. In the spice aisle they have slow cooker seasoning packets. I mixed half a packet with 1/2 cup of water and poured it into the slow cooker. I used the rest of the seasoning packet to rub on the roast. If you don't have a slow cooker seasoning packet, you can used your own spices to season the water and on the roast.
Add seasoned water and roast to the slow cooker.
Peel a sweet potato and a yam and cut into large chunks. Place in the slow cooker with the roast.
Cut 1/2 large white onion into chunks and add to the slow cooker as well.
Cook on low setting for 8 hours and you will come back to this.
The sweet potato and yam really add a nice sweet flavor to this dish. The pork was so juicy and tender from being cooked in the slow cooker. Best of all, you didn't spend all day in the kitchen.
