I am a lover of breakfast casseroles. I admit it. Every time I go to a meeting or potluck, I bring one of these easy meals and I hope that there will be others there that I can try. I love how you can start with a few basic ingredients and just swap items in and out to come up with a whole new dish. I was thinking about making a Hash Brown Casserole and knew that I had to do it when I heard that Smart and Final was celebrating Frozen Food Month with a great sale until March 26th. Everything gets a month these days, why not Frozen Food?
When you spend $40 on participating frozen food items at Smart & Final you get a coupon good for $10 off of a future purchase. There were so many items to choose from, that it was easy to find $40 worth. I was happy when I saw that Ore Ida Hash Browns were part of the deal, because I knew they would work perfectly in the casserole I was planning.
- Package of hash browns
- 8 eggs
- 2 1/2 cups of 2% milk
- 12 oz of crumbled breakfast sausage
- 2 cups of shredded cheese (I used a cheddar/jack mix)
- Salt and pepper to taste
- 9 x 13 baking dish
