I have a treat for you all today and it’s just in time for Thanksgiving. Danielle from Mostly Food and Crafts is guest posting and sharing her recipe for Pumpkin Cake Cookies. I am so excited to posting here at Mess For Less today! Thank you for having me Vicky.
I will start off by telling you a bit about my favorite room in my house -my favorite room in the house is the kitchen, not because it’s glamorous (because it is not) but because it’s where my family loves to come together and create some amazing memories. We really do live in our kitchen – I have more pictures of my kids cooking with us than anything else – I recently started a picture wall in the kitchen for these great memories (I also have a camera that is always sticky – oh well.) Besides memories, we cook up a recipe or two – like this yummy treat! Fall break was a few weeks back, during the kids week at home we literally cooked our way through the vacation. We made Pumpkin Pie Smoothies one day and Slow Cooker Applesauce another. We also made these great Pumpkin Cake Cookies!
We call them Pumpkin Cake Cookies because the texture was more that of a cake than a cookie. They are soft and delicious. I actually need to make these again because I think they are a great lunchbox snack to send to school with the kids. I am so happy to be here sharing this recipe with you today – Enjoy!!
recipe adapted from Very Best Baking
What you need:
2 1/2 cups AP flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 1/2 cups granulated sugar
1/2 cup butter (1 stick), softened
1 cup pumpkin puree
1 large egg
1 teaspoon vanilla extract
What you do:
Preheat the oven to 350 degrees.
Meanwhile, grease 2 baking sheets.
Combine flour, baking powder and soda, spices and salt in a medium bowl. Beat the sugar and butter in a large mixing bowl until they are well blended. Now add the pumpkin , egg and vanilla to this mixture and mix until smooth.
Gradually add in your flour mixture.
Now it’s time to make some cookies! Drop by tablespoonful onto your cookie sheets.
Bake these guys for 15-18 minutes or until the edges are firm. Be sure to let them cool before eating them (just a few minutes.)
Look at the inside – soft and cakelike.
