    This Corn Casserole in the Crock Pot is one of my favorite side dishes and crock pot recipes. Depending on where you are from, you may know this easy corn casserole called corn pudding. Whatever you call it, it is truly delicious!

    While this is a wonderful side to serve at Thanksgiving, Christmas, or Easter, it can be enjoyed any time of the year. It would be much appreciated at any potluck you might attend. The best thing about this easy corn pudding, is that you make it in the slow cooker.

    This corn casserole (or corn pudding) in the crock pot is one of my most requested sides! People cannot get enough of this during Thanksgiving, Christmas, Easter or any time of year.

    How To Make Crock Pot Corn Casserole Recipe

    To make this corn recipe, add one can of drained corn and one can of cream-style corn to a large bowl.

    Next, add sugar, egg, sour cream, and melted butter to the bowl and stir.

    Add a 6-7 oz package of cornbread mix to the rest of the ingredients.

    Next, add one cup of shredded cheddar cheese and mix everything. You can use mild or sharp cheese, whatever you prefer or have on hand.

    Spray the inside of the slow cooker with cooking spray. Pour the corn pudding batter into the crock pot.

    Place the lid on the slow cooker and set it to high. Cook for approximately 2 ½ hours or until the center has set.

    Transfer the corn casserole to a serving bowl and serve hot. You'll love the creamy texture of this slow cooker corn casserole.

    Tip 1: Swap the sharp cheddar for pepper jack cheese for a spicy twist. It adds just the right amount of heat without overpowering the casserole.

    Tip 2: Doubling the ingredients is a great idea if you're cooking for a crowd. To be sure it cooks evenly, you'll want to extend the cooking time by 30-45 minutes and check if the center has set before serving.

    Tip 3: Want to cut back on calories? Use a reduced-fat sour cream and cheese without sacrificing flavor.

    • 1 can yellow corn drained
    • 1 can cream style corn
    • 2 tablespoons sugar
    • 1 egg beaten
    • 1 cup sour cream
    • 1 cup shredded cheddar cheese mild or medium sharpness
    • ¼ cup butter melted
    • 1 pouch cornbread mix 6-7 ounce package

    Instructions
     

    • In a large mixing bowl, combine all ingredients.
    • Spray the inside of a slow cooker with non-stick cooking spray. Pour the corn casserole batter into the slow cooker.
    • Cover the slow cooker and set to high. Slow cook for approximately 2 ½ hours, until the center has set.
    • Transfer the corn casserole to a serving bowl and serve hot.

      Woahhhhh this is a GAME CHANGER!! I love to cook, but holidays stress me out because of how many pots I have on the stove and things I have to time just right in the oven. I had never even considered making corn casserole in the crockpot... oh man. Game changer! I can't wait to try this!!
