I am a huge fan of warehouse clubs. The problem is sometimes I go overboard. I usually get more fruit than we end up consuming and I am stuck trying to figure out what to do with the rest. We freeze some of it for smoothies and use the rest in other recipes. This past week I bought blueberries, forgetting I already had some at home that were well on their way to mushiness. Since my kids love blueberry muffins I thought we could try making them. These easy blueberry muffins are sure to become one of our favorite family friendly recipes.
Easy Blueberry Muffins
Before you start, preheat the oven to 375 degrees. Pour the flour, baking powder and salt into a bowl and stir to combine.
In another bowl, beat the egg and add the sugar, brown sugar and milk. Mix. Stir in the cooled melted butter.
Add the wet ingredients to the dry ingredients and mix just enough to combine. Fold in 1 cup of blueberries.
Fill your muffin tin with cupcake liners and fill each ¾ full with the batter.
Bake at 375 degrees for 20 minutes. These are wonderful served with some butter fresh out of the oven! We had some for breakfast and snack and froze the rest.
