Recently, we took our kids to Fisherman's Wharf in San Francisco. There is lots to do there and it is a haven for tourists. Being a food loving gal, one of my favorite parts of Fisherman's Wharf is all the yummy food options available. Whether you are craving clam chowder in a bread bowl or freshly made crepes, you will find something to satisfy there. Fisherman's Wharf has some great candy shops and every time we go we can't resist picking up some fudge. My husband is a big fan of chocolate fudge, while I prefer white chocolate fudge that has a little more going on. Inspired by our recent trip, I decided to make some fudge using one of our favorite breakfast cereals. And so, Fruity Pebbles Fudge was born.

How to make Fruity Pebbles Fudge
I love the flavor of white chocolate. As a kid, I was allergic to milk chocolate (I have since grown out of that, thankfully) and my father would always get me white chocolate bunnies at Easter. So whenever I make fudge, I love using white chocolate.
I melted white chocolate chips in a double boiler and added the melted chips and cream cheese to a stand mixer. I mixed the chips and cream cheese until well blended and then added the confectioner's sugar one cup at a time until the cream cheese mixture was thoroughly combined.
Next, I added the Fruity Pebbles cereal and mixed a little more until the cereal was incorporated throughout the fudge mixture.
Then I spread the mixture into a 9x9 pan or baking dish. You can line the pan with parchment paper or spray it with cooking spray if you wish for easier cutting and clean up.
I added more Fruity Pebbles to the top of fudge and placed the prepared pan in the refrigerator for a few hours to chill fudge.
When it was ready, we all enjoyed some Fruity Pebbles fudgy goodness. The Fruity Pebbles adds a delightful fruit flavor and crunch to the top layer of this decadent fudge. A little bit of this fudge goes a long way so a 9x9 pan would be great for a large gathering.
You can freeze this Fruity Pebbles fudge. Simply cut the fudge into squares and wrap in waxed paper. Place the pieces in an air-tight zip top bag or container. Fudge can be frozen for up to three months. When you are ready to eat it, simply remove it from the freezer and let it sit out on the counter at room temperature for 2 hours.
If you thought Fruity Pebbles was just for breakfast, think again. A bit of warning if you try this Fruity Pebbles Fudge: you will be asked to make it again...and again.

I was so happy when fruity pebbles went gluten free. This looks like a fun treat that is easy to make gluten free.
