I wanted to surprise my kids with a special snack when they came home from school. I always have some crescent rolls on hand so it was just a matter of coming up with a way to prepare them. If you are new to Mess For Less then you might not know that I have done lots of crescents roll recipes in the past. From Apple Pie Crescents to Fruit Filled Crescent Cups, I find crescents so versatile and delicious. When I looked in my pantry I saw I had some lemon creme that I bought to make lemon bars. Since I didn't have the time to make actual lemon bars, I decided to try to make some using crescent rolls. This lemon bar recipetook under 25 minutes from start to finish, so it's perfect family friendly recipe for when want something special but don't have a lot of time.
Open up the tube of crescents and unroll them. Take four of the crescents and roll them flat.
Seal together the perforations with your fingers to create a rectangular sheet of crescents. Do the same with the remaining four crescents and put that sheet aside to use for the top layer.
Place one sheet on the bottom of a greased pan.
Spread a layer of lemon creme on the crescents. Next time I make these, I will put a thicker layer than I did here. Really slather the stuff on there.
Place the second sheet or crescents on top of the lemon creme filling.
Bake according to crescent roll package directions. I put some foil on top for the last few minutes of baking so the top wouldn't get too brown.
In a small bowl, combine 6 tablespoons of powdered sugar, 1 tablespoon of water and a few squeezes of lemon juice and mix until smooth. Use a spoon to drizzle the icing over the top of the lemon crescents.
Slice into bars and serve. My kids gobbled these up! They make a great snack for kids and we had them for breakfast the next day as well. The taste and texture reminded me of a lemony danish.
