When I pick my kids up from school each day, they are hungry. Like they haven't eaten in days hungry. As soon as they get in the car, they are asking for something to eat. They usually have a snack as soon as they come home from school, but sometimes even that short car ride seems like an eternity for them. When they come home, I want to give them something filling and delicious that will hold them over until dinner. Being a busy mom, I don't have a lot of time for baking, which is why I love this recipe for No Bake Cereal Bars with Blueberries. This is a sponsored conversation written by me on behalf of Safeway. The opinions and text are all mine.
No Bake Cereal Bars
On a recent shopping trip to Safeway, I picked up Nature Valley™ Honey Oat Clusters cereal. I love to have it for breakfast because the oat clusters surrounded by wheat and corn flakes with a hint of honey are just delicious. Since it tastes so good at breakfast, I was inspired to use it to make a quick and easy after school snack for the kids. With General Mills and Safeway, you can find snacks that fit into your day, whatever it may bring. When you make these no bake cereal bars, you'll be Snacksational!
What I love about these no bake cereal bars is that you can totally change them up each time you make them. Blueberries not your thing? Use dried cherries instead. Want something a little less sweet? Omit the chocolate chips. Don't have slivered almonds on hand? Use whatever chopped nuts you have in your pantry.
This recipes takes just minutes of actual prep time. Simply melt the butter and mix in the honey, brown sugar and salt.
Then, add your Nature Valley™ Honey Oat Clusters cereal and almonds for some added crunch and protein.
Finally, add some dried blueberries and chocolate chips. Then stir to get everything coated in the honey mixture. As you stir, the chocolate chips will start to melt, coating the cereal with chocolate.
Pour the mixture into a greased cookie sheet and press down to form a flat layer. I used a spatula for this step, but if you are the hands-on type, feel free to press it down with your hands.
Cover with plastic wrap and refrigerate for 40-50 minutes so the mixture can set.
This snack can get a little messy to eat, so I recommend serving it straight out of the refrigerator. As little hands hold these bars the chocolate can start to melt, so be sure to have some napkins handy.
Next time you are in a Snacksational mood, try these No Bake Cereal Bars. They are easy to make thanks to Nature Valley™ Honey Oat Clusters cereal. What are your favorite after school snacks to make your kids?
