    No Bake Cereal Bars with Blueberries

    When I pick my kids up from school each day, they are hungry. Like they haven't eaten in days hungry. As soon as they get in the car, they are asking for something to eat. They usually have a snack as soon as they come home from school, but sometimes even that short car ride seems like an eternity for them. When they come home, I want to give them something filling and delicious that will hold them over until dinner. Being a busy mom, I don't have a lot of time for baking, which is why I love this recipe for No Bake Cereal Bars with Blueberries.

    These No Bake Cereal Bars are easy to make and delicious. My kids love the blueberry and chocolate flavor and they make the perfect after school snack.

    No Bake Cereal Bars

    What I love about these no bake cereal bars is that you can totally change them up each time you make them. Blueberries not your thing? Use dried cherries instead. Want something a little less sweet? Omit the chocolate chips. Don't have slivered almonds on hand? Use whatever chopped nuts you have in your pantry.

    This recipes takes just minutes of actual prep time. Simply melt the butter and mix in the honey, brown sugar and salt.

    Then, add your Nature Valley™ Honey Oat Clusters cereal and almonds for some added crunch and protein.

    Finally, add some dried blueberries and chocolate chips. Then stir to get everything coated in the honey mixture. As you stir, the chocolate chips will start to melt, coating the cereal with chocolate.

    Pour the mixture into a greased cookie sheet and press down to form a flat layer. I used a spatula for this step, but if you are the hands-on type, feel free to press it down with your hands.

    Cover with plastic wrap and refrigerate for 40-50 minutes so the mixture can set.

    This snack can get a little messy to eat, so I recommend serving it straight out of the refrigerator. As little hands hold these bars the chocolate can start to melt, so be sure to have some napkins handy.

    Ingredients

    • ¼ cup butter
    • ¼ cup honey
    • ¼ cup brown sugar
    • ¼ teaspoon salt
    • 2 cups Nature Valley™ Honey Oat Clusters cereal
    • ½ cup slivered almonds
    • ⅓ cup chocolate chips

    Instructions

    • Melt butter in a 2 or 3 quart saucepan.
    • Add honey, brown sugar and salt. Stir until dissolved. Cook until boiling, while stirring, and then remove from heat.
    • Mix in Nature Valley™ Honey Oat Clusters cereal, almonds, dried blueberries and chocolate chips and stir. The chocolate chips will start melting as you stir.
    • Spray a cookie sheet with cooking spray.
    • Press the cereal mixture onto the cookie sheet to make a flat layer.
    • Cover with plastic wrap and refrigerate for 40-50 minutes until set.
    • Cut into bars with a knife.
    • Store in refrigerator.
