I am very lucky to have a husband who loves cooking and is good at it. When he is working however, he usually doesn’t get back in time to make dinner, so I handle it during the week. Now don’t get me wrong, I love to cook as well. But during the week, with school pick ups, extracurricular activities and play dates, I am just looking for the quickest and easiest way to get dinner on the table. Enter my trusty old friend, the slow cooker. I have used it in the past to prepare many family friendly recipes. Today’s Slow Cooker Chicken and Stuffing only has four ingredients and cooks up in 3-4 hours so it could not be easier to prepare. Ingredients:
- 6 oz box of stuffing
- 1 peeled and chopped red delicious apple
- 1 1/2 cups of chicken broth
- 2 lbs of defrosted uncooked chicken breasts
- Cooking spray

Spray the inside of the slow cooker with cooking spray. Pour in a box of stuffing and add chopped apple.
Add one and a half cups of chicken broth to the stuffing and stir. Add the chicken breasts on top.
Cook on high for 3-4 hours. At the two hour mark, stir the stuffing and chicken. If the stuffing looks dry, you can add 1/4-1/2 cup of water at this time. Cover and resume cooking.
Being cooked in the slow cooker makes the chicken so tender and juicy. And the stuffing is just the way I remember as a kid. If you have ever had stuffing from inside a turkey (it’s more frowned upon these days to make it that way) then this moist stuffing with apples is very reminiscent of that.
