Making arancini balls can be time consuming because of the work involved in making the rice.  But I recently discovered a cool shortcut that makes easy arancini in a fraction of the time.

Italian Rice Balls

Arancini Balls are a delicious meal made from cooked rice and cheese (sometimes other fillings). The ingredients are rolled into balls, dredged in breadcrumbs, and fried.

My secret to easy arancini is to use a quick cooking rice.

Prepare rice and add in egg, breadcrumbs, salt, pepper, oregano, Parmesan cheese and mozzarella.

Mix and form small balls out of the rice mixture.

Dip in eggs and roll in breadcrumbs.

Cook in pan in hot oil until golden brown.

Then they will be nice and gooey!

These are great served with marinara sauce for dipping.
