These Rocky Road Cookies are chocolate cookies with more chocolate inside! They are perfect for kids who love rocks and are great to make for a construction birthday theme.

Let’s get started!

Ingredients

– all purpose flour – baking soda – salt – salted butter – brown sugar – granulated sugar – chocolate instant pudding mix – eggs – vanilla extract – semi-sweet chocolate chips – Chocolate Rocks

Combine flour, baking soda, and salt in a medium bowl and set aside.

Beat the butter and sugar together on high speed  for at least 2 minutes, or until light brown.

Add the pudding mix, vanilla, and eggs and beat for 3-4 minutes on high.

Slowly add the flour mixture to the wet ingredients and mix on low speed. After 1 minute, increase speed to high and continue mixing until cookie dough has formed.

05  Add the chocolate chips and chocolate rocks to the mixing bowl and stir with a rubber spatula until fully combined.

06 Make even sized dough balls using a cookie scoop and set them on a cookie sheet. Bake for 10-12 minutes, or until the top is slightly brown and firm.
