This cheesy hashbrown casserole can be made ahead of time for a filling breakfast.

Ingredients

  • 8 hash brown patties
  • 8 eggs
  • 2 1/2 cups 2% milk
  • 12 oz crumbled breakfast sausage
  • 2 cups shredded cheese I used a cheddar/jack mix
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375 degrees.
  2. Fry the hash browns according to package directions and lay them down on a greased 9 x 13 baking dish.
  3. Cover the hash browns with 6 oz of crumbled sausage and 1 cup of shredded cheese.
  4. Combine the 8 eggs and 2 1/2 cups of 2% milk and pour the entire mixture evenly over the sausage, cheese and hash browns.
  5. Add the remainder of the crumbled sausage to the top of the eggs.
  6. Cover with the remainder of the cheese. Add some salt and pepper to taste.
  7. Bake for 40 minutes.
