Ingredients

  • 1 box- 8 oz Penne pasta
  • 1/2 cup green pepper diced
  • 1/2 cup red pepper diced
  • 1 cup cherry tomatoes quartered
  • 1/2 cup red onion
  • 8 medium black olives
  • 2 oz mini pepperoni
  • 1 cup chopped part skim mozzarella
  • 3 tbsp fresh basil
  • 3/4 cup store bought Italian fat free dressing

Instructions

  1. Cook pasta according to package directions.
  2. Rinse under cold water.
  3. Set to the side to chill.
  4. Prepare your vegetables.
  5. In a large bowl add pasta, red & green pepper, tomatoes, cheese, red onion, olives, and pepperoni.

  6. Toss to combine.

  7. Add the dressing.

  8. Toss to coat.
  9. Refrigerate 1 hour before serving.
  10. Garnish with fresh basil.
