Chili Macaroni Casserole

Combine chili and mac and cheese to make this Chili Macaroni Casserole from Mess for Less. It is meaty, cheesy and delicious.

  • Preheat oven to 375 degrees.
  • Cook macaroni according to package directions.
  • Cook beef, onion and garlic in a skillet over medium heat until beef has browned. Drain.
  • Add to skillet: tomato paste, kidney beans, diced tomatoes, diced green chilies, cumin, chili powder, and salt and pepper. Stir to combine.
  • Add the cooked pasta and one cup of shredded cheese to the skillet and stir to distribute evenly.
  • Place the mixture in a greased 3 quart casserole dish and bake for 20 minutes at 375 degrees.
  • Remove casserole from oven and top with remaining 1 cup of cheese. Place the casserole back in the oven for 5 to 7 minutes or until the cheese has melted.
