Banana Chocolate Chip Cookies

  • Preheat the oven to 350 degrees. Peel and mash 2 bananas.
  • Add the mashed bananas to a large bowl and also add melted butter, brown sugar, granulated sugar, and vanilla extract. Mix.
  • In a medium bowl, combine flour, baking soda, oats and salt.
  • Add the dry ingredients to the bowl with the wet ingredients and stir until thoroughly combined.
  • Next, add in chocolate chips.
  • Mix the chocolate chips until they have been incorporated into the mixture.
  • Line a baking sheet with parchment paper. You can also use a silicone mat. Use a cookie scoop to scoop and drop cookie dough on the cookie sheet leaving 2 inches in between cookies.
  • Bake cookies for 10-12 minutes until the edges have started to brown. This will insure that the edges are crispy while the center remains chewy.
  • Remove the cookies from the oven and let them sit for a minute or two and then transfer them to a wire rack to cool.

Notes

Tip 1: You can freeze these cookies in a freezer bag with layers separated by parchment paper for up to 3 months.
Tip 2: Riper bananas will add more sweetness to the cookie. They are also easier to mash than bananas which are less ripe.
Tip 3: You can mash the bananas with a fork, but I like using a potato masher. It makes the job quick and easy.
