Preheat the oven to 350 degrees. Peel and mash 2 bananas.
Add the mashed bananas to a large bowl and also add melted butter, brown sugar, granulated sugar, and vanilla extract. Mix.
In a medium bowl, combine flour, baking soda, oats and salt.
Add the dry ingredients to the bowl with the wet ingredients and stir until thoroughly combined.
Next, add in chocolate chips.
Mix the chocolate chips until they have been incorporated into the mixture.
Line a baking sheet with parchment paper. You can also use a silicone mat. Use a cookie scoop to scoop and drop cookie dough on the cookie sheet leaving 2 inches in between cookies.
Bake cookies for 10-12 minutes until the edges have started to brown. This will insure that the edges are crispy while the center remains chewy.
Remove the cookies from the oven and let them sit for a minute or two and then transfer them to a wire rack to cool.
