  • 6 Roma tomatoes diced
  • ½   cup red onion diced
  • 3 cloves garlic minced
  • ¼   cup fresh basil chopped
  • ¼   cup extra virgin olive oil
  • 2 tablespoon Balsamic Vinegar
  • ¼   teaspoon salt
  • ¼   teaspoon black pepper
  • ¼ cup parmesan cheese grated


  • Dice your tomatoes and onion.
  • Mince the garlic.
  • Chop your fresh basil.
  • Combine all the tomatoes, onion, garlic and basil in a bowl.
  • Add 2 tablespoon balsalmic vinegar.
  • Add a pinch of salt and pepper and ¼ cup Parmesan cheese.
  • Stir together.
  • Serve as a chicken topping or on a baguette.



Store in an airtight container in the refrigerator for up to 2 days. This will taste best if you eat it right after you make it.
