  • 2 cups shredded cheddar
  • 1 pound ground beef
  • 2 cloves chopped garlic
  • ¼ red onion, chopped
  • 2 tablespoon taco seasoning
  • 3 tablespoon TABASCO® Sauce
  • ¾ cup salsa

For guacamole

Instructions

  • Preheat your oven to 375 degrees. 
  •  Line a cookie sheet with parchment paper.
  • Scoop tablespoons of shredded cheese onto the parchment paper, leaving a few inches between each scoop.
  • Place the cookie sheet in the oven for 6-7 minutes or until the edges of the cheese have turned brown.
  • While the cheese is melting, spray the bottom part of a mini muffin tin with cooking spray.
  • After the cheese has melted, remove it from the oven and use a spatula to remove it from the parchment paper. Drape each circle of melted cheese over the bottom of a muffin tin. 
  • Heat olive oil in a large pan and brown the chopped onions and garlic. Then add the ground beef, and break up into crumbles while it cooks. Drain the grease from the pan. 
  • Add taco seasoning and TABASCO® Sauce to the ground beef.
  • To make the guacamole, scoop the Avocados from Mexico into a bowl and mash them with a fork. Add the tomatoes, onions, garlic, salt and lime to the bowl.
  • Mix to create the guacamole.
  • To assemble the cheese cups, scoop some of the TABASCO® Sauce seasoned ground beef into the cheese cups and top with salsa and guacamole.

Notes

These are best eaten when they are made. If you try and warm them up after, the cheese cups will melt.
