Ingredients

  • 12 oz chopped and cooked chicken breasts
  • 12 oz frozen riced cauliflower
  • 3 cups broccoli florets, chopped
  • 1 teaspoon garlic powder
  • 1 tsp onion powder
  • 4 oz cream cheese, softened and cut into small pieces
  • 2 eggs
  • 1.5 cups shredded cheddar cheese
  • teaspoon pepper
  • ¼ teaspoon salt

Instructions

  • Preheat oven to 350 degrees. Cook your chicken in a pan and cut into cubes.
  • Microwave the riced cauliflower according to package directions.
  • Pour into a large bowl and added cut broccoli florets.
  • Add cut up pieces of softened cream cheese, garlic and onion powders, and 2 eggs to bowl.
  • Add 1 cup of shredded cheese and cooked chicken to bowl. Add salt and pepper to taste.
  • Mix well to combine all the ingredients.
  • Transfer mixture to a greased 8x8 casserole dish. Top with ½ cup shredded cheddar.
  • Bake for 40 minutes at 350 degrees.
