Keto Chicken Broccoli Casserole with Cauliflower
We loved this Keto Chicken Broccoli Casserole with Cauliflower. If you love broccoli and rice casserole, but hate the carbs, try this cheesy dish!
- 12 oz chopped and cooked chicken breasts
- 12 oz frozen riced cauliflower
- 3 cups broccoli florets, chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- 4 oz cream cheese, softened and cut into small pieces
- 1.5 cups shredded cheddar cheese
- ⅛ tsp pepper
- ¼ tsp salt
Preheat oven to 350 degrees. Cook your chicken in a pan and cut into cubes.
Microwave the riced cauliflower according to package directions.
Pour into a large bowl and added cut broccoli florets.
Add cut up pieces of softened cream cheese, garlic and onion powders, and 2 eggs to bowl.
Add 1 cup of shredded cheese and cooked chicken to bowl. Add salt and pepper to taste.
Mix well to combine all the ingredients.
Transfer mixture to a greased 8x8 casserole dish. Top with ½ cup shredded cheddar.
Bake for 40 minutes at 350 degrees.
