Line a baking sheet with parchment paper. Preheat oven to 350 degrees.
In a large bowl, combine the white cake mix, oil, vanilla and two eggs. Mix until all the ingredients have been thoroughly combined.
Divide the dough into two bowls and use food coloring to dye the dough in one bowl green and the dough in the other bowl red.
Use a tablespoon to scoop out the cookie dough and roll it in powered sugar.
For a multicolored cookie, simply roll a little of the red and green dough together. You don't want to mix it up so the colors combine. You still want to be able to see each distinct color.
Place the cookie dough on the parchment lined baking sheet a few inches apart. You should be able to fit 12 cookies per baking sheet. Bake for 10-12 minutes at 350 degrees.
Remove from oven and let the cookies cool on a cooling rack so they can set.You can dust these with powdered sugar.
