This Southwestern Cheesy Chicken and Rice Casserole is easy to make and super tasty thanks to the succulent breaded chicken, cheese and ranch dressing.

Cook the brown rice according to the package directions and cut the chicken breasts  into nugget-sized  pieces.

In a zip-top bag,  combine cheese  & breadcrumb  mixture with chili  powder, cumin, garlic  powder, and onion  powder. Drop chicken pieces  into bag. Shake to  coat.

Place the coated chicken on  a greased tray and bake at  375 degrees for 25-30  minutes until the internal  temperature reaches 165  degrees.

Spread the cooked brown rice on a greased 8-inch  baking dish.

Top the rice with ½ can  of black beans and ½  can of corn.

Add the cooked,  breaded chicken  on top.

Sprinkle 1 ½ cups of  shredded cheese over  the chicken.

Bake and remove from oven. Drizzle ranch dressing  on top & sprinkle tortilla  strips for crunch.
