Instructions
In a large soup pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess fat if needed.
Add garlic, onion, celery, and carrots to the pot. Cook for 5–6 minutes, stirring occasionally, until softened.
Stir in corn, diced tomatoes (with their juices), beef broth, salt, and pepper. Bring to a boil.
Reduce heat and simmer for about 15–20 minutes to let the flavors blend.
Add egg noodles and simmer another 8–10 minutes, or until noodles are tender.
Adjust seasoning if needed and serve hot with a sprinkle of parsley or crackers on the side.
