There were so many great flavor combinations working in this sausage and pepper sandwich. The sweet and mild flavor of the peppers combined with the sausage and pesto work perfectly together. The toasted roll gives a nice crunch with each bite and the oozy, melted cheese make this sandwich a winner.
Spray a pan with cooking spray and cook peppers and onions over medium heat until the red peppers and onions soften and the mixture starts to brown.
While the pepper/onion mixture is cooking, start cooking your sausage. For the sausage to fit well on the roll, I cut it in half and spread it out in a pan. This also helped reduce the cooking time. Brown the sausage until no more pink remains and it is fully cooked. While this is cooking preheat a broiler.
Spread the pesto sauce on both sides of the sliced bun.
Top with the cooked sausage and pile on the banana peppers, red peppers and onions. Cover with ¼ cup of shredded mozzarella cheese and toast in a broiler or oven 5-10 minutes until cheese melts and bread starts to brown.
