In a large skillet, sprayed with cooking spray, cook the ground turkey until it's browned. Set it aside.
Cook elbow macaroni according to package directions.
Add 1 tablespoon of olive oil to a large skillet and cook garlic, onion, and red peppers on medium heat. Sauté until they have softened.
Add the cooked veggies along with the marinara sauce, diced tomatoes, and sundried tomatoes to the large skillet with the ground turkey. Add Italian seasoning, salt and pepper. Mix and let it cook until warmed through.
Grab a 9x13 pan and pour in cooked elbow macaroni.
Pour the saucy turkey mixture on top of the pasta and top with 1 ½ cups of mozzarella cheese. Sprinkle on ½ cup of Parmesan cheese.
Bake for 30 minutes. If the top starts to brown too soon, cover with foil. Let sit for a few minutes before serving.
