These light and fluffy pumpkin cookies with cake mix are one of our favorite fall flavor combinations. The spice cake mix in this recipe adds a little something extra to the pumpkin cookies and the chocolate chips make them hard to resist!
Pour the box of spice cake mix with the pumpkin pie spice in a large bowl.
Add the can of pumpkin puree to the bowl.
Stir the mixture until all the cake mix has been completely blended.
Stir to incorporate the chocolate chips into the cookie batter.
Line a cookie sheet or baking sheet with parchment paper. Scoop rounded tablespoons of the dough onto the cookie sheet.
To flatten the cookies, grease the bottom of a glass with cooking spray and use it to press the dough down in the pan.
Bake in a 350 degree oven for 15-18 minutes.
When the cookies are removed from the oven, let them remain on the cookie sheet for 5 minutes to firm up. Transfer the cookies to a cooling rack.
Optional: frost with cream cheese or vanilla frosting

You can make your own pumpkin pie spice. This makes 3 teaspoons, but you only need ½ teaspoon for this recipe. Mix the following ingredients together in a small bowl:
1 1⁄2 teaspoons ground cinnamon
1⁄2 teaspoon ground nutmeg
1⁄4 teaspoon ground cloves
1⁄2 teaspoon ground ginger
Take care to not over mix these cookies. Mix just until the ingredients are combined so the cookies do not become tough.
