Pour one cup water into the instant pot insert. Place in steamer basket. Add in washed red skin potatoes. Place lid onto the instant pot.
Turn valve on lid to sealed position. Press pressure cook or manual button and set timer to 30 minutes. It will take about 10 minutes to come to pressure then cook another 30 minutes. Once the pot stops counting and beeps, release the pressure from the valve on the lid.
Remove potatoes with tongs and serve with any toppings you desire.
