  • Preheat oven to 400°F. Line a large baking sheet with parchment paper.
  • Chop sausage and vegetables into bite-size pieces.
  • In a large bowl, mix olive oil with garlic powder, onion powder, paprika, salt, and pepper.
  • Add sausage and vegetables to the bowl and toss to coat.
  • Spread evenly onto the prepared baking sheet.
  • Bake for 15 minutes, toss, and bake another 10–15 minutes until everything is tender and lightly browned.
  • Sprinkle with parmesan and parsley before serving.

Notes

  • Cut the potatoes a little smaller if you're in a hurry - they’ll roast quicker that way.
  • Make sure everything has space on the pan. If it’s too crowded, it’ll steam instead of roast. Use two pans if needed.
  • If you want some extra crispy edges, turn on the broiler for the last couple of minutes. Just keep an eye on it so nothing burns.
