Preheat oven to 400°F. Line a large baking sheet with parchment paper.
Chop sausage and vegetables into bite-size pieces.
In a large bowl, mix olive oil with garlic powder, onion powder, paprika, salt, and pepper.
Add sausage and vegetables to the bowl and toss to coat.
Spread evenly onto the prepared baking sheet.
Bake for 15 minutes, toss, and bake another 10–15 minutes until everything is tender and lightly browned.
Sprinkle with parmesan and parsley before serving.
Cut the potatoes a little smaller if you're in a hurry - they’ll roast quicker that way.
Make sure everything has space on the pan. If it’s too crowded, it’ll steam instead of roast. Use two pans if needed.
If you want some extra crispy edges, turn on the broiler for the last couple of minutes. Just keep an eye on it so nothing burns.
