These soft and chewy spice cake mix cookies come together in just minutes using only three simple ingredients. Perfect for busy weeknights when you need a homemade treat fast.
Preheat oven to 350°F. Line baking sheet with parchment paper.
In large bowl, combine cake mix, oil, and eggs until well mixed.
Using cookie scoop or tablespoon, drop dough onto prepared baking sheet, spacing 2 inches apart.
Bake 10-12 minutes until edges are light golden brown.
Cool on baking sheet 3-4 minutes, then transfer to wire rack.

Don’t overmix the dough. Once everything’s combined, just stop stirring. Mixing too much can make the cookies a little tough, and we’re going for soft and chewy here.
Use a cookie scoop if you have one! It helps make the cookies the same size so they bake evenly.
And give them a few minutes to cool on the pan before moving them. They’re super soft right out of the oven and can fall apart if you try to move them too soon.
