Ingredients

  • 2 Ripe Bananas
  • 1 1/2 cups Fresh Blueberries
  • 1/3 cup Vanilla Yogurt
  • 1 1/2 cups Flour
  • 3/4 cup Brown Sugar
  • 1/4 tsp Salt
  • 1 tsp Baking Soda
  • 1/2 cup Butter Melted
  • 2 Eggs
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, add the bananas, yogurt, brown sugar, eggs, vanilla, and butter. Mix together with a spoon until well combined.
  3. In a medium size bowl, whisk together the flour, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients and mix well.
  5. Toss the blueberries with about a tablespoon of flour. This will prevent the berries from sinking. Fold 1 ¼ Cup of blueberries into the batter, save ¼ cup of blueberries for the next step.
  6. Line a loaf pan with parchment paper and pour in the batter. Top with the remaining ¼ cup of blueberries.
  7. Place in oven for 1 hour or until a toothpick comes out clean.
  8. Let cool and enjoy!
