Place parchment paper on a cookie sheet. Scoop out dough and form into balls. You should get around 24 balls (1 ¼ - 1 ½ inch each). Place the cookie dough balls on the baking sheet.
Refrigerate cookie dough balls for 20 minutes or until they have firmed up.
Break the chocolate bar into smaller pieces, place in a microwave-safe bowl and melt it in the microwave on high for 60 seconds. Then stir and return to microwave for 10-second increments until the chocolate has melted.
Using a fork, roll and dip cookie balls into the melted chocolate and shake off any excess chocolate. Place the chocolate-covered balls on the parchment-lined baking sheet.
Refrigerate for 20 minutes until the chocolate has set.
If you wish, you can add a drizzle of melted chocolate to the top. You'll have to re-melt the chocolate to do this. If you do this, pop the truffles back into the refrigerator for another 15 minutes so the candy coating drizzle can harden.
- You can use an equal amount of dark chocolate or chocolate chips in place of the chocolate bar.
