Ingredients
  

  • 1 tbs olive oil
  • 2 tbs garlic, minced
  • ½ onion, finely chopped
  • 1 lb 92% Laura's Lean Ground Beef
  • 1 1.4 cup enchilada sauce Approx. 10 oz
  • 1 tbs taco seasoning
  • 1 cup corn
  • 4 oz diced green chiles
  • 16 oz refried beans
  • 15.5 oz black beans
  • 2 cups shredded Mexican or cheddar cheese

Instructions
 

  • Preheat oven to 350 degrees.
  • Heat 1 tablespoon of oil in a large skillet over medium heat. Add the minced garlic and diced onions, sautéing for 2-3 minutes or until the onions become translucent.
  • Add Laura's Lean Ground Beef to the skillet and cook over medium-high heat, breaking it into crumbles with a wooden spoon. Continue cooking until the beef is evenly browned. Once cooked, drain any excess grease from the skillet.
  • To the cooked beef, add the enchilada sauce and taco seasoning, stirring to evenly coat the mixture. Incorporate the corn kernels, diced green chiles, and refried beans, stirring until the beans are fully combined into the beef mixture. Fold in the black beans gently and allow everything to heat through for 2-3 minutes.
  • Pour this mixture into a greased casserole dish.
  • Top mixture with shredded cheese.
  • Bake in a 350 degree oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove the casserole from the oven and allow it to cool slightly. You can garnish with chopped green onions before serving.

  • To save time, chop the onions and mince the garlic before you start.
  • Thought using pre-shredded cheese is a great shortcut, shredding your own makes for melting more smooth.
  • For added zing, feel free to add jalapeños, cilantro, or a squeeze of lime.
