Preheat oven to 350 degrees F and spray a 9x9 casserole dish with cooking spray.
In a skillet, cook the breakfast sausage over medium heat until it's brown and crumbly. Break up the sausage as it cooks. Drain. Set aside.
Toast 4 slices of bread and cut it into 1 inch cubes.
In a large bowl, whisk together eggs, milk, salt, pepper, and Dijon mustard until well combined.
Add the cooked sausage to the bowl along with the bread cubes, and ¾ cup of shredded cheddar. Mix everything well.
Pour into greased casserole dish and cover with plastic wrap.
Refrigerate for 20 minutes.
Remove from refrigerator, uncover and top with remaining ¾ cup of shredded cheese.
Bake for 40-50 minutes or until a knife inserted in the center comes out clean.
Let rest for a few minutes before slicing and serving.
Test for doneness using a knife inserted into the center of the casserole. If it comes out clean, the casserole is done.
To make the casserole easier to slice, let it rest for a few minutes before cutting into it.
Be sure to let the bread fully absorb the egg mixture for a custard-like texture to your casserole.
