You can even prep this casserole the night before (don't worry, I'll tell you how) and get some extra sleep in the morning. A yummy breakfast and more sleep? That is a win-win in my book!
Ingredients for Breakfast Casserole with Bread
- Ground breakfast sausage - If you are looking for a healthier option, turkey sausage is a great alternative.
- Large eggs - Use room temperature eggs for best results. They will make the casserole light and fluffy.

Breakfast Casserole With Bread
Ingredients
- 1 pound pork breakfast sausage
- 5 large eggs
- 1 ½ cups shredded cheddar cheese
- ½ cup whole milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 slices white bread cut into 1-inch cubes and toasted
- ½ teaspoon Dijon mustard
Instructions
- Preheat oven to 350 degrees F and spray a 9x9 casserole dish with cooking spray.
- In a skillet, cook the breakfast sausage over medium heat until it's brown and crumbly. Break up the sausage as it cooks. Drain. Set aside.
- Toast 4 slices of bread and cut it into 1 inch cubes.
- In a large bowl, whisk together eggs, milk, salt, pepper, and Dijon mustard until well combined.
- Add the cooked sausage to the bowl along with the bread cubes, and ¾ cup of shredded cheddar. Mix everything well.
- Pour into greased casserole dish and cover with plastic wrap.
- Refrigerate for 20 minutes.
- Remove from refrigerator, uncover and top with remaining ¾ cup of shredded cheese.
- Bake for 40-50 minutes or until a knife inserted in the center comes out clean.
- Let rest for a few minutes before slicing and serving.
