    Easy Breakfast Casserole

    I had a MOPS meeting today and I signed up to bring a hot dish. I had no idea what to make so I turned to Pinterest for inspiration. I typed in "MOPS" and saw lots of ideas for great breakfast dishes. I stumbled upon one that looked simple and I had already had the ingredients on hand.     This easy breakfast casserole is a crowd pleaser that can be assembled the night before.

    Easy Breakfast Casserole

    This dish uses a 9x13 casserole pan. If you get on with a cover and carrier, it is easy to bring with your to a gathering.

    The number of bread slices you use will depend on the type of bread. I used a smaller wheat bread and 7 slices was enough to cover the pan. If you have larger slices of bread, you will use less.

    After you have added your bread slices, it is time to spread on some yummy cheese.

    Then the eggs and milk get poured over the casserole.

    The crumbled bacon gets spread on top before you put this in the oven.

    You can bake this as soon as it's assembled, or refrigerate overnight and bake it in the morning. I love having breakfast assembled already on those busy mornings.

    I pulled this out of the oven, popped a lid on it, put it in my Anchor carrier and left. This was at 8:30 AM. The breakfast casserole was served an hour later at the MOPS meeting, still warm and yummy.

    This easy breakfast casserole would be great to bring to a potluck, a meeting, or just for a special breakfast at home. I just love that you can make it the night before and just pop it in the oven.

    Can I make this casserole the night before?

    Yes! Assemble everything the night before, cover it, and store in the fridge. Just bake in the morning for a fresh, hot breakfast.

    Can I freeze leftovers?

    You sure can. Let the casserole cool completely, then wrap portions tightly and freeze. Reheat in the microwave or oven.

    Can I use different meats or veggies?

    • 9X13 Casserole Dish

    Ingredients
      

    • 7 slices of wheat bread with the crusts cut off you can use white as well
    • 10 oz of a mix of shredded monterey jack and cheddar cheese Costco sells this in a big bag
    • 8 eggs beaten
    • 2 ½ cups of 2 % milk
    • 4 oz of crumbled bacon

    Instructions
     

    • Spray the bottom of a 9x13 glass dish with cooking spray.
    • Line the dish with the bread with the cut off crusts. 6 pieces just fit and then I cut up the 7th piece to fill in the gaps.
    • Spread the cheese evenly over the bread.
    • Mix the milk with the beaten eggs and pour slowly over all of the bread and cheese.
    • Sprinkle crumbled bacon over the top.
    • Refrigerate overnight, then in the morning bake at 350 degrees for 45-60 minutes until cooked through and the top has risen.

      Yummy! How delicious does this look? I was debating about whether or not I should make this for Easter...I didn't and I kinda wish I would have. Maybe I will have to use your recipe and make this casserole soon:)
