This breakfast casserole is super convenient because it uses ready-made biscuits. If you are a busy mom, this means you can always serve a warm and delicious breakfast or brunch without stress.

    The refrigerated biscuits in this recipe mean you don't have to knead, wait for dough to rise, or spend time rolling out dough. I'll even share how you can assemble the casserole the night before and keep it in the refrigerator until you are ready to bake it in the morning.

    Ingredients for Biscuit Breakfast Casserole

    • Grands biscuits - I used a 16.3 oz can of Pillsbury Grands refrigerated biscuit dough. One can comes with 8 biscuits, but you only need 6 for this recipe.
    • Large Eggs - You will get the best results if the eggs are at room temperature.
    • Milk - Whole milk or 2% milk works as does almond milk if you are looking for a dairy-free alternative.
    • Shredded cheddar cheese - Feel free to use any type of shredded cheese you prefer such as mozzarella or pepper jack for a bit of a kick.
    • Bacon - Cooked and crumbled. Substitute turkey bacon if you don't eat pork.

    How to Make Biscuit Breakfast Casserole Recipe

    This recipe could not be easier. You start with a can of biscuit dough. 8 biscuits typically come in a can but you will only use 6 biscuits for this recipe. I find that more biscuits cause the casserole to be too doughy.

    Cut up the biscuits into smaller pieces and place them in a casserole dish. These will be the base of the casserole. In a large bowl, mix the eggs, milk, salt and pepper. This egg mixture then gets poured over the biscuits.

    What is breakfast without bacon? Don't worry, the bacon is coming! Sprinkle the cooked crumbled bacon on top and add a generous sprinkle of shredded cheese which will give your casserole a pretty golden crust.

    Bake this easy breakfast casserole until the eggs are set and then let it cool a little before slicing. Once you taste this easy breakfast recipe I am sure it will be something you make again and again.

    Can I use homemade biscuit dough in this recipe?

    Using ready-made biscuits offers a lot of convenience, but if you prefer to make biscuits from scratch, you can do that as well.

    I love this Buttermilk Biscuits Recipe from Tastes Better From Scratch. You may have to adjust the cooking time of the casserole since homemade dough bakes a bit differently.

    How can I make Biscuit Breakfast Casserole ahead of time?

    Simply prepare the casserole as directed, then cover it, and place it in the refrigerator overnight. When you are ready to cook it, uncover the casserole pan and bake according to the directions. Since the casserole will be cold, you may need to add a few extra minutes to the cooking time.

    How do you store an easy biscuit breakfast casserole?

    You can store leftovers in an airtight container and refrigerate for 3-4 days.

    You can also freeze this casserole. After it has cooled completely, cut it into individual portions and then store in a zip top bag. To reheat from frozen, let it thaw in the fridge overnight and then bake until heated through.

    Tips for Making Canned Biscuit Breakfast Casserole

    Tip 1: Let canned biscuits come to room temperature before cutting them up. This will help them rise more when baking.

    Tip 2: Make sure to keep an eye on your casserole towards the end of the baking time. You don't want the biscuits and cheese on the top to get too brown. If you notice this happening before the rest of the casserole is done cooking, you can cover the baking dish with aluminum foil.

    Ingredients
      

    • 1 can Grands biscuits just use 6 biscuits
    • 8 eggs large
    • ¾ cup milk
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • 8 slices cooked bacon crumbled
    • 1 cup shredded cheddar cheese

    Instructions
     

    • Preheat oven to 350 degrees.
    • Open the can of biscuits and cut each biscuit into 8 pieces. Place the biscuit pieces in the bottom of a greased 9x13 baking pan.
    • In a large bowl, mix eggs, milk, salt and pepper. Pour this over the biscuits.
    • Cook bacon and crumble when done. Sprinkle the cooked bacon over the biscuits.
    • Top with the shredded cheese.
    • Bake for 25-30 minutes, or until the eggs are set and the biscuits are golden brown.
    • Let the casserole cool for a few minutes before slicing and serving.

    Notes

    • Keep an eye on the casserole near the end of the baking time. If it is getting too brown, cover the casserole dish with foil.
    • Allow canned biscuits to reach room temperature before using them. This will help them to rise more during baking.
