In a mixing bowl, cream the butter until light and fluffy, about 6 minutes. Scrape down the sides, then add the brown sugar, beating until fully incorporated, approximately 3 minutes more.
Add the eggs, milk, and vanilla to the mixing bowl, mixing thoroughly and scraping down the sides as needed.
Gradually incorporate the flour mixture into the wet ingredients, mixing just until combined.
Gently fold in the granola and chocolate chips until evenly distributed.
Using a medium cookie scoop, portion the cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10 minutes. Once done, remove the baking sheets from the oven and allow the cookies to cool on the sheets for 7 to 8 minutes before transferring them to a wire rack to cool completely.
