How to Make Granola Cookie Recipe

Start by preheating your oven to 350°F and prepare two large baking sheets with parchment paper. In a medium bowl, whisk together the flour, salt, and baking soda.

In the bowl of a stand mixer, cream the butter until light and fluffy, about six minutes. Add the brown sugar and continue to beat until fully combined, about three more minutes. You can also use a handheld electric mixer.

To this mixture, add the eggs, milk, and vanilla extract, and mix well. Make sure to scrape down the sides of the bowl as needed to ensure everything is well incorporated.

Add the dry ingredients to the wet mixture and beat just until combined. Be careful not to overmix, as this can result in tough cookies.

Fold in the granola and chocolate chips until they are evenly distributed throughout the dough. Use a medium cookie scoop to portion out the dough onto the prepared baking sheets, placing them about two inches apart.

    • 1 ¾ cups all purpose flour
    • ¾ teaspoon salt
    • ½ teaspoon baking soda

    • 2 eggs room temperature
    • 2 tablespoons milk
    • 2 teaspoons vanilla extract
    • 2 ½ cups granola 11 ounces
    • 1 cup semi-sweet chocolate chips

    Instructions

    • Preheat your oven to 350 degrees and line two large rimmed baking sheets with parchment paper.
    • In a medium bowl, whisk together the flour, salt, and baking soda until well combined.
    • In a mixing bowl, cream the butter until light and fluffy, about 6 minutes. Scrape down the sides, then add the brown sugar, beating until fully incorporated, approximately 3 minutes more.
    • Add the eggs, milk, and vanilla to the mixing bowl, mixing thoroughly and scraping down the sides as needed.
    • Gradually incorporate the flour mixture into the wet ingredients, mixing just until combined.
    • Gently fold in the granola and chocolate chips until evenly distributed.
    • Using a medium cookie scoop, portion the cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
    • Bake for 10 minutes. Once done, remove the baking sheets from the oven and allow the cookies to cool on the sheets for 7 to 8 minutes before transferring them to a wire rack to cool completely.

    Notes

    • Let your butter and eggs chill at room temperature. This will make mixing much easier and give you a smoother dough.
    • Cream the butter and sugar really well. This part is super important for making your cookies light and fluffy!
    • When you add the granola and chocolate chips, spread them out evenly so every bite is packed with delicious flavors and textures.
