⭐Why This Recipe Works
- A great way to use too-ripe bananas
- Cookies turn out crispy and chewy
- Banana and chocolate flavors work so well together
🥣Ingredient Notes
- Bananas - Make sure to use ripe bananas, as you would for banana bread.
- Butter - These cookies are made using melted butter which results in a more brownie-like texture.
- Brown sugar - Using a mix of brown sugar and granulated sugar helps the cookies to spread nicely and imparts a slight caramel flavor from the brown sugar.
- Rolled oats - Add a chewy texture to the cookies.
- Chocolate chips - I made this with milk chocolate chips, but semi-sweet would work as well.
📋Step by Step Instructions
STEP 1: Preheat the oven to 350 degrees. Peel and mash 2 bananas.
You can mash the bananas with a fork, but I like using a potato masher. It makes the job quick and easy.
STEP 2: Add the mashed bananas to a large bowl and add melted butter, brown sugar, granulated sugar, and vanilla extract. Mix.
STEP 3: In a medium bowl, combine flour, baking soda, oats and salt.
STEP 4: Add the dry ingredients to the bowl with the wet ingredients and stir until thoroughly combined.
STEP 5: Next, add in chocolate chips.
STEP 6: Mix the chocolate chips until they have been incorporated into the mixture.
STEP 7: Line a baking sheet with parchment paper. You can also use a silicone mat. Use a cookie scoop to scoop and drop cookie dough on the cookie sheet leaving 2 inches in between cookies.
STEP 8: Bake cookies for 10-12 minutes until the edges have started to brown. This will insure that the edges are crispy while the center remains chewy.
STEP 9: Remove the cookies from the oven, let them sit for a minute or two, and then transfer them to a wire rack to cool.

Tip 3: You can mash the bananas with a fork, but I like using a potato masher. It makes the job quick and easy.
