  • Preheat the oven to 350 degrees F and prepare a baking sheet with parchment paper.
  • Combine the lemon cake mix, Cool Whip, and egg in a large mixing bowl. Mix until well combined. The dough will be sticky.
  • Place the cookie dough in the freezer for 30 minutes so it gets firm and is easier to work with.
  • Remove from freezer. Using a cookie scoop, drop rounded spoonfuls of dough into a container filled with confectioner's sugar. Use a spoon to roll the dough in the powdered sugar.
  • Drop the powdered sugar dough balls onto the parchment-covered cookie sheet a few inches apart.
  • Bake for 8-10 minutes. The center of the cookie may still be slightly soft, but they firm up as they cool.
  • Remove cookies from the oven and let them cool on the baking sheet for a few minutes before moving them to a wire rack for cooling.

  • For an extra burst of citrus flavor, add one teaspoon of grated lemon zest to the cookie dough before mixing.
