Start your day off right with Oat Flour Pancakes. These gluten-free pancakes are both guilt-free and incredibly tasty and will leave you feeling satisfied until lunchtime!
Place the oats in a blender, cover and blend until the oats have turned into oat flour.
Add the bananas, eggs, almond milk, vanilla, baking powder, cinnamon, salt, and chia seeds.
Cover the blender and mix until the ingredients have formed a smooth batter. Be sure there are no lumps in the batter, as this will improve the texture of your pancakes.
Spray a griddle or skillet with cooking spray. Heat the griddle over medium heat and pour a ¼ cup of batter onto the griddle for each pancake.
Let the pancakes cook for a few minutes, until bubbles form on the surface.
Use a spatula to carefully flip pancakes and cook them for another minute on the other side until they are golden brown.
Do the same with the remaining batter and remove from pan when done.
Drizzle on maple syrup and serve.
