  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • Unroll the pie crust onto a clean work surface and use a cookie cutter to cut out cookies. Carefully place the cookies onto prepared baking sheet.
  • Combine the sugar and cinnamon in a small bowl to create the cinnamon sugar mixture. Beat and egg in a small bowl and brush egg over the tops of the cookies.
  • Generously sprinkle the cinnamon sugar on each cookie.
  • Place cookies in the oven, and bake for approximately 8-10 minutes or until the edges turn golden-brown.
  • Remove from oven and let cookies cool on the baking sheet for a few minutes and then transfer them to a wire rack.

  • Before using the dough, let the pie crust rest at room temperature for 15 minutes. This makes the dough easier to handle.
