Pie Crust Cookies
Ingredients
- 2 refrigerated pie crust 2 crusts
- 2 tablespoons granulated sugar
- 1 tablespoon ground cinnamon
- 1 egg
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- Unroll the pie crust onto a clean work surface and use a cookie cutter to cut out cookies. Carefully place the cookies onto prepared baking sheet.
- Combine the sugar and cinnamon in a small bowl to create the cinnamon sugar mixture. Beat and egg in a small bowl and brush egg over the tops of the cookies.
- Generously sprinkle the cinnamon sugar on each cookie.
- Place cookies in the oven, and bake for approximately 8-10 minutes or until the edges turn golden-brown.
- Remove from oven and let cookies cool on the baking sheet for a few minutes and then transfer them to a wire rack.
