Teriyaki Chicken Casserole
Ingredients
- 1 ¼ cups teriyaki sauce
- 1 lb chicken breast cubed
- 20 oz stir fry vegetables frozen; 20 oz bag
- 1 ½ cups white minute rice
- 1 ½ cups water
Instructions
- Preheat oven to 350 degrees F. Spray a 9×13-inch baking dish with non-stick cooking spray.
- Add water to a saucepan and boil. Add the rice, cover, and remove from heat according to package directions.
- Cut the chicken breasts into 1 inch pieces.
- Add the chicken to the prepared casserole dish. Top with frozen vegetables. Pour one cup of teriyaki sauce over the chicken and vegetables.
- Place in the oven and bake for 15 minutes. Remove from oven and add the cooked rice and the remaining ¼ cup of teriyaki sauce.
- Stir gently, and return the baking pan to the oven for an additional 15-20 minutes.
