  • Preheat oven to 350 degrees F. Spray a 9×13-inch baking dish with non-stick cooking spray.
  • Add water to a saucepan and boil. Add the rice, cover, and remove from heat according to package directions.
  • Cut the chicken breasts into 1 inch pieces.
  • Add the chicken to the prepared casserole dish. Top with frozen vegetables. Pour one cup of teriyaki sauce over the chicken and vegetables.
  • Place in the oven and bake for 15 minutes. Remove from oven and add the cooked rice and the remaining ¼ cup of teriyaki sauce.
  • Stir gently, and return the baking pan to the oven for an additional 15-20 minutes.

  • If the teriyaki sauce is too sweet, you can add a bit of honey. If you prefer a more tangy sauce, just add a touch of vinegar.
  • You can also use brown rice or cauliflower rice in this recipe.
