Ingredients For Chicken Broccoli Rice Casserole
- Chicken broth - Adds liquid and warmth to the flavor of the casserole.
- Cream of chicken soup - Provides the dish with a rich, creamy texture.
- Knorr cheddar broccoli rice and pasta blend - An easy way to add rice, pasta, and seasoning to the recipe.
- Broccoli - Use frozen broccoli that has been thawed and chopped into smaller pieces.
- Chicken -Tenderloins work best since they cook up tender and juicy.
- Cajun seasoning and Paprika - Adds a warmth and hint of spice.
- Cheddar cheese - Shredded cheese brings a creaminess and binds everything together.
How to Make Chicken Broccoli Casserole
You will be cooking this in a 9X13 casserole dish and adding the ingredients straight to the pan. Pour the chicken broth and cream of chicken soup into your casserole dish and whisk until smooth. Pour the Knorr packets in next and stir so everything is thoroughly combined.
Sprinkle the thawed, chopped broccoli over the rice mixture. Season the chicken tenderloins and place them on top of the broccoli and rice. Don't forget to top everything with shredded cheddar cheese generously. Cover the dish with foil and bake in a 375-degree oven for 45 minutes.
When you remove this dish from the oven, the top layer will be golden and cheesy. Underneath the perfectly cooked chicken, creamy and savory rice and pasta mingle with tender broccoli to create a yummy blend of flavors and textures.
Tips for Making
Tip 1: If you have leftover rotisserie chicken, use it instead of the chicken tenderloins in this recipe. This is an easy shortcut that works well if you are out of frozen chicken.
Tip 2: For a beautiful presentation, add a little green. Some chopped parsley, basil, or green onions will add to the visual appeal of this dish.
Tip 3: If you are not a fan of spice, skip the Cajun seasoning. The dish will still have plenty of flavor.
Tip 4: The frozen broccoli can be thawed in the microwave for convenience.
How Do You Store Chicken Broccoli Rice Casserole?
This chicken dish tastes just as good the next day, so if you can't finish it all in one night, no worries! Before storing, make sure the casserole has cooled to room temperature. Then, transfer the cooled casserole into an airtight container or cover the 9X13 pan tightly with plastic wrap.
You can store this in the refrigerator for up to 3 days. When you are ready to enjoy it again, just reheat it in the microwave. This will taste as delicious as when it first came out of the oven. I love having the leftovers the next day for a quick and filling lunch.
What Can I Serve With Cheesy Chicken Broccoli Rice Casserole?
This dish already contains protein, carbohydrates, and vegetables, so you don't need to serve a side. If you wish to, pair it with simple side dishes to complement its rich flavors. Serving this with a vinaigrette-dressed salad provides a refreshing contrast to the creamy casserole.
This recipe also pairs well with some garlic bread, garlic knots, or breadsticks. Instead of a rich dessert, some colorful fruit salad is a great way to end the meal. This will balance the dish's richness and end things on a refreshing note.
