Chicken Alfredo Bake
When it comes to comfort food, few meals can beat Chicken Alfredo Casserole. Why is it so popular? People love the creamy richness of the Alfredo sauce paired with pasta, tender chicken, and gooey, melted cheese. There is something for everyone!
But there is more to love about this Pasta Alfredo and Chicken than the taste. It is one of the easiest meals you can make since it is baked in one pan making prep and cleanup a breeze. It is perfect for a busy night or entertaining guests.
Ingredients for Chicken Alfredo Casserole
- Chicken breasts - You can use skinless and boneless chicken breasts or rotisserie chicken in this casserole.
- Penne pasta - I used penne pasta because I like the texture and feel it holds up well in the casserole. You can also use rotini or bowtie pasta.
- Alfredo sauce - This rich creamy sauce brings this dish together. I used a jarred variety but feel free to make your own. I like this 4 ingredient Alfredo Sauce from Snappy Gourmet.
- Shredded mozzarella cheese - Adds a gooey, melty goodness to the casserole.
- Shredded Cheddar cheese - This will add a sharp kick to our casserole and it pairs well with the mellow mozzarella.
- Onion: Dice the onion small so you'll have onion flavor throughout the casserole.
- Garlic: Saute garlic and onions together in the pan before adding them to the casserole.
- Italian seasoning: A little sprinkle adds some Italian flavor.
How to Make Cheesy Chicken Alfredo Casserole
What I love about this casserole is that you can have several things going at once which reduces the total amount of time you will spend preparing this recipe.
I used shredded chicken in this recipe, but you can also use rotisserie chicken. Making this chicken alfredo casserole with rotisserie chicken is a quick and easy shortcut. To make my shredded chicken, I just boiled the chicken for 15 minutes or so until it registered an internal temperature of 165 degrees. When it did, I removed it from the water and easily shredded it.
While the chicken is boiling, you can cook your penne pasta in a separate pot. This is also a good opportunity to saute the onions and garlic that will be going into this chicken casserole. Once everything is cooked, simply combine all the ingredients in a large bowl or pot and mix well.
Finally, transfer the pasta and chicken mixture into a 9x13 casserole dish. Then top with remaining mozzarella cheese and cheddar cheese. Now it's ready to bake. When it is done the cheese will be melted and bubbly.
How To Store Chicken Alfredo Casserole
The only thing better than this pasta and chicken casserole is knowing that you will have leftovers for tomorrow. To keep the casserole tasting fresh you will want to make sure it has cooled completely before you store it. Store the casserole in an airtight container for up to three days.
You can also freeze chicken alfredo leftovers for up to two months. All you need to do is slice up the casserole into individual portions and freeze in a zip-top bag. When you are ready to eat, just thaw in the fridge overnight, and heat it.
What Do You Serve with Pasta and Chicken Alfredo Casserole?
There are lots of sides that work well with this dish. Simplicity is the name of the game. Since this casserole has a lot of flavors going on, you don't want to serve it with anything overly complicated. This casserole pairs perfectly with a fresh side salad which complements the rich cheesiness of the dish. You can toss some mixed greens into a large bowl with cherry tomatoes, cucumbers, and some oil and vinegar.
I also like to serve this meal with a side of garlic bread or Texas toast. You can use the garlicky bread to mop up the creamy sauce or just enjoy the crunch alongside the casserole.
Can I Make Chicken Alfredo casserole with vegetables?
You certainly can! The cheesiness of this dish makes adding veggies easy, especially if you are serving people who aren't that fond of vegetables.
Some vegetables that work well with this chicken casserole are broccoli florets, diced bell peppers, or even some spinach. I love turning this into a chicken alfredo casserole with broccoli since it adds a pop of color and extra vitamins. Who doesn't like that?
Tips for Making Baked Chicken Alfredo
Tip 1: You'll want to let the casserole rest for a few minutes after it comes out of the oven. This lets the cheese topping set so it is easier to serve.
Tip 2: When you cook your pasta make sure to drain it when it is just shy of al dente. The pasta is going to keep cooking in the oven so you want to be sure it doesn't turn out overcooked.
Tip 3: You can cook your own chicken like I did, but if things are hectic, you can always grab a rotisserie chicken or use rotisserie chicken leftovers. It is a big time saver!
