Instructions

  • Preheat your oven to 425°F.
  • Thoroughly scrub the potatoes and poke several holes in each one.
  • Place the potatoes directly on the oven grates or on a baking rack, and bake for 40 minutes.
  • Once done, remove the potatoes from the oven and let them cool.
  • In a microwave-safe bowl, melt 2 tablespoons of butter in 30-second increments.
  • Carefully scoop out the insides of the potatoes, and brush both the skins and the insides with the melted butter. Season with salt, pepper, and garlic powder.
  • Return the potatoes to the oven and bake for an additional 15 minutes to crisp up the skins.
  • Add shredded cheese and cooked bacon, then bake for another 5 minutes until the cheese is melted.
  • Top with sour cream and green onions, or your choice of toppings, and enjoy!

Notes

  • Slice bigger potatoes into quarters instead of halves. This makes for easier handling.
  • To get extra crispy skins, you can bake them directly on the oven grates.
