    🥣Ingredient Notes

    • Vegan ground "beef" - You can use Impossible® Plant-Based Beef or Beyond Beef® Plant-Based Ground.
    • Red kidney beans and green lentils - We used a combination of kidney beans and lentils since they add fiber and protein.
    • Rice - We used white rice, but for more fiber substitute brown rice.
    • Tomato puree or tomato sauce - Creates a rich and savory base for the chili.
    • Red chili peppers - To add some heat.
    • Bell peppers - Add color and texture.
    • Tomatoes - Adds flavor. We use both canned diced tomatoes and tomato paste or puree.
    • Red onions - Finely chopped.
    • Cilantro - Diced for garnish. Skip if you don't like cilantro.

    📋Step by Step Instructions

    STEP 1: Wash and finely chop bell peppers, chili peppers, onions, and garlic.

    STEP 2: Pour vegetable oil into a large saucepan and heat it up. Fry the onions and garlic over medium heat until softened then add peppers and chillies.

    STEP 3: Add the vegan meat, basil, and tomato puree (or sauce) to the saucepan. Season with paprika then cook on the stovetop for about 10-15 minutes stirring occasionally.

    STEP 4: Add rice and 1 cup of water to the saucepan. Cook on low heat, stirring occasionally.

    STEP 5: Add kidney beans, green lentils, and chopped tomatoes. Mix well and simmer for about 25-30 minutes.

    We garnished our chili con carne with vegan corn chips, lime, cilantro, and organic vegan croutons.

    Ingredients
      

    • 2 bell peppers finely chopped
    • 2 red chili peppers finely chopped
    • 2 red onions finely chopped
    • 3 garlic cloves finely chopped
    • ⅓ cup vegetable oil
    • 0.5 pound Vegan ground "beef"
    • A few leaves fresh basil
    • 1 cup tomato sauce or tomato puree
    • 1 tablespoon paprika powder
    • 1 ½ cup rice
    • 1 cup water
    • 1 cup red kidney beans canned
    • 1 cup green lentils canned
    • 2 tomatoes chopped
    • Fresh Cilantro diced for topping
