    Breakfast Casserole Recipe

    I made this cheesy breakfast casserole recipe a few weeks ago for a MOPS meeting and it turned out great - cheesy, potato-y bacon-y goodness in a casserole dish. What makes it especially wonderful is that you can assemble the entire thing the night before and just pop it in the oven in the morning. Mornings are so hectic - the last thing I want to be doing is putting together a hot dish.  

    Breakfast Casserole Recipe - Cheese, bacon, potatoes and eggs. So yummy and can be made the night before!

    Preheat the oven to 350 degrees if you are making this right away. If you are baking the casserole the next day, you can skip this step. Spray your pan with cooking spray. We used a 9 x 13 pan.

    Spread 2 cups of shredded potatoes and ¼ cup of the onion in the baking pan.

    Add half of the bacon (4oz) and ½ cup of the cheese. Then repeat the process again to create a second layer.

    When you have added the second layer, mix the eggs, evaporated milk and Lawry's and pour the mixture evenly on top of the layers.

    If you will be baking this the next morning, cover and refrigerate. Bake at 350 degrees for 60 minutes while covered with foil. Remove foil and cook for an additional 5 minutes until cheese starts to brown a little bit.

    Yes! You can assemble everything the night before and refrigerate it. Just bake it in the morning for a warm, ready-to-go breakfast.

    You can! Let the casserole cool completely, then wrap portions tightly and freeze. Reheat in the oven or microwave when you’re ready to eat.

      I made this last year for Christmas breakfast along with cinnamon rolls. It was fantastic! It served 6 people with leftovers the next day. I altered the recipe by adding sausage to it (along with the bacon) and omitted the onions. I made it the night before and let it sit in the refrigerator overnight. I like to save time that way. And I'll be doing the same this year. But I will caramelize some yellow onions this time. Thanks for the recipe!

      My wife refers to this as breakfast crack - though I admit I modify slightly. She dislikes onions. So those are out. I replace the lawreys with paprika, powdered onion (what she doesn't know won't hurt me) ,garlic, chile pepper,black pepper, and salt mixture. And most importantly- more bacon. Yes, more. No, you need more than that. Add an extra egg to bind the extra bacon. Which you should add more of, because bacon. Which I guess converts this to a bacony cheesy breakfast casserole. That you can add more bacon to.
