Why these orange cupcakes are awesome

To make these delicious citrus cupcakes, simply mix the Tampico Citrus Punch into the batter. It's that easy!
Ingredients
- butter
- sugar
- vanilla
- eggs
- all purpose flour
- baking powder
- salt
- Tampico Citrus Punch
- Orange
How to make this citrus cupcake recipe
Preheat oven to 375. Prepare a muffin tin with paper cupcake liners.
Combine melted butter and sugar with a mixer on medium-high speed. Add in eggs and vanilla and whisk for 2 minutes. You can use an electric mixer or a stand mixer with a paddle attachment.
In a medium bowl, combine flour, baking powder and salt.
Alternate adding flour mixture and Tampico Citrus Punch to butter and sugar mixture in mixer while continuously mixing. Mix for 3-4 minutes.
Fill each cupcake cup ¾ full.
Bake for 20 minutes at 375 degrees or until a toothpick inserted into the center comes out clean.
Place the cupcakes on wire racks to cool.
Mix some orange food coloring into vanilla frosting (can also use cream cheese frosting) and place the frosting into a piping bag. If you do not have a piping bag you can easily make one by cutting a small corner off of a small zip top bag.
Pipe the orange frosting onto the cooled cupcakes.
Cut up some orange slices and add a quarter of an orange slice on top of each of the frosted cupcakes.
These citrus cupcakes made with Tampico will make a perfect after school snack for my kids. When they get home from school, I like to give them some time to play and decompress. They are always hungry after a play session.

You can store these cupcakes in airtight containers in the refrigerator for up to 4 days. You can store them at room temperature for 1 day.
You can add some orange zest on top of the frosting or to the batter if you wish.
