    • Frozen cheese tortellini: Makes the soup hearty and satisfying.

    One of my favorite things about this recipe is that it doesn't need any fancy tools to make. You’ll need a large pot or Dutch oven to cook the soup, a sharp knife and cutting board for chopping the onion and garlic, plus a wooden spoon or spatula for stirring.

    How to Make Italian Sausage Tortellini Soup

    This soup is quick and straightforward to make. Brown the Italian sausage in a large soup pot. Once the pork sausage is almost cooked, toss in the diced onion and cook until it becomes soft and translucent. Next, add minced garlic and cook for a couple of minutes.

    Sprinkle in the flour and stir it to coat the sausage and onions. Then add the Italian seasoning, mustard powder, and a pinch of red pepper. Pour in the chicken broth, scraping the bottom of the pot to lift any browned bits. There's a lot of flavor there!

    Once everything is well combined, stir in the heavy cream and bring the soup to a boil.

    Add the spinach and frozen tortellini, and simmer for a few minutes until the tortellini is tender. Add some salt and pepper to taste. If you'd like, you can sprinkle some freshly grated parmesan cheese on top. Serve and enjoy!

    • 1 lb ground Italian sausage
    • ½ large yellow onion diced
    • 2 cloves garlic minced
    • 3 tablespoons all-purpose flour
    • 1 ½ teaspoons Italian seasoning

    • 5 cups chicken broth

    Instructions

    • Sprinkle the all-purpose flour over the sausage mixture and cook for 2 minutes, stirring constantly. Add the Italian seasoning, mustard powder, and a pinch of red pepper for a little heat (if desired), and cook for 1 more minute.
    • Gradually pour in the chicken broth, using a spatula or spoon to gently scrape the bottom of the pot to deglaze and incorporate all the flavor.
    • Stir in the heavy cream and bring the mixture to a gentle boil.
    • Add the chopped spinach and frozen tortellini, cooking for 3–4 minutes or until the tortellini is tender and cooked through.
    • Taste the soup and adjust the seasoning with salt and pepper as needed.
