This soup is quick and straightforward to make. Brown the Italian sausage in a large soup pot. Once the pork sausage is almost cooked, toss in the diced onion and cook until it becomes soft and translucent. Next, add minced garlic and cook for a couple of minutes.


Sprinkle in the flour and stir it to coat the sausage and onions. Then add the Italian seasoning, mustard powder, and a pinch of red pepper. Pour in the chicken broth, scraping the bottom of the pot to lift any browned bits. There's a lot of flavor there!
Once everything is well combined, stir in the heavy cream and bring the soup to a boil.


Add the spinach and frozen tortellini, and simmer for a few minutes until the tortellini is tender. Add some salt and pepper to taste. If you'd like, you can sprinkle some freshly grated parmesan cheese on top. Serve and enjoy!

- Sprinkle the all-purpose flour over the sausage mixture and cook for 2 minutes, stirring constantly. Add the Italian seasoning, mustard powder, and a pinch of red pepper for a little heat (if desired), and cook for 1 more minute.
- Gradually pour in the chicken broth, using a spatula or spoon to gently scrape the bottom of the pot to deglaze and incorporate all the flavor.
- Stir in the heavy cream and bring the mixture to a gentle boil.
